Recipe:

  • 1/4 cup white wine vinegar (i used celery vinegar because that’s all I had)

  • 1 shallot, sliced

  • 1 tsp whole black peppercorns

  • 2 sprigs of tarragon, plus 1 Tbsp chopped

  • 2 egg yolks

  • 8 Tbsp unsalted butter (1 stick), melted to about 140F
