Recipe:
1/4 cup white wine vinegar (i used celery vinegar because that’s all I had)
1 shallot, sliced
1 tsp whole black peppercorns
2 sprigs of tarragon, plus 1 Tbsp chopped
2 egg yolks
8 Tbsp unsalted butter (1 stick), melted to about 140F
