Hi! Are you using fresh scallops? Just wondering if dry packed scallops are good enough :)

Made this tonight and it was a 10/10. Had to use tomatillos instead of ground cherry, but wow. Just incredible. My first recipe from your substack, and I’m so excited to try more!
